Father Thomas Augustine, Administrator Pro Tem, St Brigid Parish in Friendsville, says to make good Indian food, you need patience – and plenty of it.
That’s because Father Augustine, like so many of his fellow Indian chefs, believes in all fresh, healthy ingredients. He eschews the artificial, uses very little oil, and, above all, TAKES HIS TIME.
“I don’t measure anything,” Fr. Augustine, who cooks effortlessly by and from the heart, explains.
For this year’s Rectory, Set, Cook!, Fr. Augustine made a healthy chicken fry with a side of aromatic rice, cooked in his favorite piece of kitchen tech; a trusty Black & Decker rice cooker.
